Lemon Ricotta Muffins

Ok, yes so I do have a thing for lemon, and I am so dreaming of springtime! More like wishful thinking.



The recipe is a must try, next time you go shopping, pick up a lemon and some ricotta cheese!

Lemon Ricotta Muffins

2 cups all purpose flour
1/2 cup plus 2 tsp sugar
2 1/2 tsp baking powder
1/2 tsp salt
1 cup ricotta cheese
1/3 cup milk
6 tablespoons butter or margarine, melted
2 large eggs
2 tsp freshly grated lemon peel


1. Preheat oven to 400 F, and grease a 12 muffin, muffin pan.

2. In a large bowl, stir together the flour, 1/2 cup sugar, baking powder and salt.

3. In a separate bowl, mix ricotta, milk, eggs, melted butter and ricotta. Stir until just moistened.

4. Spoon batter into muffin pan. Sprinkle with the remaining sugar over the muffins.

5. Bake for 15-20 minutes. Cool on a wire rack.

  1. I've never been a particularly "crafty" person, but since reading your blog, I've had an overwhelming urge to take up scrapbooking! I'm still slightly afraid to try!

    I must say, too, I love the redesign!
