The other day I baked up a storm, trying to use up some of the plump, juicy blueberries in my freezer. Wish they were fresh, but nope, not in the middle of February!
I thought I would share this muffin recipe, it is really, really good. What I like about it, is that it is more like a biscuit than a muffin. Give them a try if you are looking for something new!
Blueberry Lemon Muffins
2 cups flour
1/2 cup white sugar
3 tablespoons baking powder
1/2 teaspoon salt
Rind of one lemon
1 egg
1 cup milk
1/2 cup butter (melted)
1 cup fresh or frozen blueberries
Mix flour, sugar, baking powder, salt and lemon rind in large bowl.
Beat egg in medium sized bowl: add milk and butter.
Add egg mixture to dry ingredients.
Stir in blueberries. Fill muffin pan 2/3 full and bake at 400 degrees F for 15 minutes.
Makes 12 muffins.
